This new coffee from our friends at Finca Villa Pastora is a rare Ají variety. Named after the Spanish word for chili pepper, the Ají variety is known for its uniquely spicy coffee cherries, both in aroma and flavor. A recent discovery in the coffee world, this variety is genetically distinct from the ancestral seeds brought to the Americas centuries ago, and experts are still uncertain about its origin.
Villa Pastora Ají offers a complex yet delicate cup, with sweet citrus notes like Meyer lemon, subtle floral undertones, a freshness of aromatic herbs like lemongrass, and a tea-like body.
